Fluffy apple cinnamon pancakes

Fall is here and that calls for warm, comforting flavors! Pumpkin Pancakes are delicious, but why not switch things up with these Apple Pie Pancakes? Fluffy apple pancakes made with chopped apples and warm cinnamon are so delightful. They only get better when you add maple syrup, whipped cream, and cinnamon sugar applesauce on top! This recipe is the best excuse to head to the apple orchard. These apple pancakes call for 1 cup of finely chopped apples to mix in with the batter. You’re guaranteed to get some apple in each bite! I love the combination of apple and cinnamon in fall, but you’re free to add even more warming seasonings to these easy pancakes, like nutmeg or ginger.

How to make apple pancakes

It’s surprisingly easy. Regular pancakes are delicious but adding fresh apples and cinnamon makes them a reall Fall breakfast treat! Whisk the flour, sugar, baking powder, baking soda, salt, and cinnamon together in a bowl. In a separate bowl, mix the milk, eggs, oil, and vanilla together. Pour the wet ingredients into the dry mix. Stir until everything is combined. Next, stir in the chopped apples. Cook 1/3 cup of batter at a time on a griddle or pan over medium high heat. When you see bubbles forming on top of the pancake and the edges start to firm up, flip it and cook the other side for another few minutes.  Serve the finished apple pie pancakes with plenty of maple syrup and enjoy!

Tips for the best apple pie pancakes

Apples – Any kind of apple will work in an apple pancake recipe. McIntosh, Cortland, Gala, and Honeycrisp are popular in the fall. Granny Smith or Golden Delicious are great choices when making this recipe year-round. Grating apples – Feel free to grate the apples using a box grater instead of chopping them up. Peel or no peel – Leave the apple peel on or remove it. It’s entirely up to you! Griddle temperature – Make sure the griddle or pan isn’t too hot or the pancakes will burn really easily. 375ºF is a great temperature when cooking pancakes. Making a big batch? Keep the finished pancakes on a baking sheet in a 200ºF oven so they stay warm. Other fruit – Try this recipe with other kinds of fruit! It’d be delicious made with berries, pears, or peaches instead.

Can they be made gluten free?

All you have to do to make gluten free apple pancakes is swap the all purpose flour with your favorite 1:1 gluten free flour blend.

Can they be made vegan?

Yes! Follow my No Milk No Eggs Pancake recipe instead. Replace the butter with oil or vegan butter and add the chopped apples to the batter.

Can you freeze apple pancakes?

Absolutely! They freeze really well, so go ahead and double or triple the batch so you always have apple pancakes ready to go. To freeze, wrap the cooked and cooled pancakes in plastic wrap or store them in a freezer-safe bag. They can defrost in the fridge overnight or your can reheat them for 30 seconds in the microwave.
