This is one of those recipes that was created when I was rooting around in our cabinets, looking for ingredients that “go together”. We had a beef kielbasa, but what was I going to do with it? Usually I cook Cabbage and Kielbasa, Crockpot Sweet and Sour Kielbasa, Candied Kielbasa, Sausage and Kale Soup or Slow Cooker Kielbasa And Green Beans but I was looking for something more tomato-y, so I grabbed a pantry staple: crushed tomatoes.
Just like that this Crockpot Kielbasa dish was created, and now it’s a family favorite with Matthew always wondering when we’re going to eat it next!
Ingredients
For this recipe you’ll need the following ingredients:
How to Slow Cook Kielbasa in Tomato Sauce
First, grab your link of kielbasa. I recommend using 2 pounds worth, but if you only have 1 pound, you can do that too. If you’re only using 1 pound, you will probably have extra tomato sauce. Since the tomato sauce is so good, this isn’t a bad thing. Now cut your kielbasa up into about 2 inch size pieces. Add a can of crushed tomatoes into the slow cooker. And now add your chicken broth. Add in some flavor, salt, pepper and brown sugar. Stir. Add in your chopped up kielbasa pieces. Finally, add in the vegetables that are going to taste amazing with this kielbasa. You’ll need green bell peppers, sliced up, and one onion, diced. You can swap the green peppers for yellow or red peppers if preferred. Now cook on low for 4 hours. During this time your kitchen is going to smell amazing. Tell your family dinner will be ready soon, because you know they’re going to be drifting into the kitchen very soon when they smell this. Scram, get out!
Serving Ideas
You can serve this kielbasa in many ways. My family loves it over white rice, especially spooning the tomato sauce over everything. You can also serve over egg noodles, or even just have it “as is” with vegetables on the side.
Our other way favorite way to eat this is like a sausage sub – add on hoagie rolls, cover with tomato sauce, peppers and onions and gobble it up!
