Fresh Cucumber Sandwich
When your garden gives you cucumbers you make half sour pickles, cucumber tomato salad, cucumber bread, cucumber cookies (!!) and a fresh cucumber sandwich! Cucumbers are the best, they just keep giving and giving! This cucumber sandwich tastes so light and fresh. It’s made with simple white bread, and a cream cheese / garlic spread. You can eat it for lunch (especially great during the Summer!), a late night snack, or as simple finger food for a picnic. Looking for more garden sandwich recipes? Traditional Cucumber Sandwich Ingredients
You will need about half a cucumber per sandwich depending on the size of cucumber.
How to Make a Crunchy Cucumber Sandwich
Peel the cucumber and then cut into thin slices. Use a towel to pat the cucumbers to dry. Patting them will prevent a soggy sandwich. Add cream cheese to 2 slices of bread. Add minced garlic on top of the cream cheese, evenly spreading it out. Arrange cucumber slices on top, with a sprinkle of salt and pepper. Place bread together, gently pressing down. Serve and enjoy your cucumber sandwich!
What else can I add to my sandwich?
Add slices of fresh juicy red tomatoes for sweetness. Add thinly sliced onions for more crunch. Spread on red onion jam for a little sweetness. Want it without cream cheese? Mash up a avocado and use as a spread, or try pesto. You could also use softened salted butter spread on the bread. Add a slice of cheese, such as American, Provolone or Pepper jack if you want a spicy kick.
