Cucumber Tomato Salad with Red Onions, Cilantro and Lime Juice
I love tomato salads with sour lime juice dressing. When there’s lots of cucumbers, tomatoes and red onions growing in the garden, I always make this salad! This is such a fresh Summer time salad with minimal work. Basically chop up the veggies, add to a bowl, chill in the refrigerator for 30 minutes and you have a refreshing cucumber tomato salad to serve! It’s delicious served for lunch or as a side salad for dinner. We love it next to Indian dishes like Butter Chicken and Chickpea Curry. Looking for more fresh cucumber recipes? How to make Cucumber Tomato Salad
Cut tomatoes into wedges, peel and slice cucumbers, finely chop a red onion, mince garlic and chop fresh cilantro up. Add ingredients into a large serving bowl. Season with salt and pepper and mix until lime juice coats all the vegetables. Cover with plastic wrap (or lid) and place in the refrigerator to chill for at least 30 minutes. Serve and enjoy!
Can I make this in advance?
You sure can. This salad can be stored in the refrigerator for 3-4 days. If you remove it from the refrigerator and it seems dry, add a little additional lime juice (or olive oil) and toss.
What else can you add in?
Beans, you can add a can of black beans (washed and drained) to make a heartier salad. Italian Dressing, love the tangy flavor of Italian dressing? Add a couple tablespoons of your favorite Italian salad dressing. Avocado, for a creamy salad add slices of fresh avocado in. Cheese, add shredded mozzarella or feta cheese in. Red Pepper Flakes, for a spicy kick add a couple dashes of red pepper flakes.
