Delicata Squash Recipe
Have you ever tried delicata squash? It’s delicious! When your garden is filled with squash, or you pick one up at the August farmers market curious about the taste, this roasted delicata squash recipe is sure to become a favorite! I prepare this very similarly to other roasted vegetables, and like it as a side dish, or on top of a salad. It also makes a perfect Summer snack! Personally, I like to double this recipe as my family eats them like french fries and there’s never any left over!
What does delicata squash taste like?
Delicata squash tastes like a sweet, creamy squash. The taste isn’t overwhelmingly sweet, just subtly sweet – so no need to add any extra sugar when roasting it. My kids call it “healthy candy”, so if kids like it, you know its going to be good!
Do you eat the skin of delicata squash?
Yes, the skin is completely edible. The only thing you need to do is remove the seeds before eating.
How to Roast Delicata Squash
Prepare a baking sheet by adding parchment paper or silicone baking mats on top. Cut up the delicata squash into thin slices, about 3/8 to 1/2 inch thick. Add squash to baking sheet, add olive oil, salt and pepper on top. Bake until browned and then serve. I hope you like this roasted delicata squash!
