Cucumber and Red Onion Salad
If you’re looking for a simple light salad made with cucumbers and red onions, then you found it. Once the garden starts giving us cucumbers and onions, this salad is always on rotation. It only takes 10 minutes to prep, and then you put in the refrigerator to chill for at least 2 hours, but I recommend overnight if you can for that full marinated zing the apple cider vinegar, sugar, minced garlic and oregano dressing makes when mixed all together. I usually serve this as a side salad for dinner (delicious served next to grilled chicken, steak and fish) and get togethers, but it’s also great for a easy lunch. How to Make Cucumber Onion Salad
Slice cucumbers into slices and onions into thin rings. I like to cut the cucumbers into about 1/4 inch thick pieces. In a large mixing bowl make the salad dressing. Add cucumbers and onions into the bowl, tossing to fully coat it. Cover with plastic wrap or a lid and chill in the refrigerator for at least 2 hours. I think letting it sit overnight results in a more marinated salad the next day. Serve and enjoy!
Can I make this in advance?
Yes, you can. This salad can be stored in the refrigerator covered for 3-4 days. If you remove it from the refrigerator and it seems dry, add a little additional apple cider vinegar and toss. Pin for later:
