Summer Tomato Salad
This tomato salad is a garden dream! Made with fresh tomatoes, finely chopped red onion, cucumber, green bell pepper and basil, it’s so fresh tasting! Simply add the veggies and olive oil dressing mix to a bowl, give it a stir and let it sit on the counter for 30 minutes to marinate the flavors together. And now you have a simple yummy salad to serve, especially good on a hot Summer day when you don’t want to cook! This makes a delicious infused garlic olive oil dressing, so grab a french baguette and cut it up into slices to dip in the olive oil when the salad is gone! Looking for more fresh tomato recipes? Heirloom Tomato Salad Ingredients
Heirloom or roma tomatoes work best, especially fresh from the garden. Red onion is our favorite for salads, but you can use a yellow onion too. Cucumber adds nice crunch, you can dice it or cut into thin slices. Green bell pepper, or you can use orange or yellow bell pepper if you’d like. Fresh basil really makes this salad taste fresh. If you love fresh herbs, you can add 1-2 tablespoons of fresh cilantro in it too. Olive oil is preferred for dressing to let the produce freshness shine, but if you want something more vinegary you can make it with red wine vinegar or white wine vinegar. Other: you’ll also need dried oregano, minced garlic and salt and pepper.
How to Make Fresh Tomato Salad
Add all of the ingredients to a large mixing or serving bowl, sprinkling with salt and pepper to taste. Give it a good stir to coat everything with the olive oil and herb dressing. Let it sit on the counter for 30 minutes, this helps marinate all the flavors together. I cover mine with plastic wrap during this time because it’s usually Summer time. Serve and enjoy this heirloom tomato salad!
How to Serve Tomato Salad
Serve next to your favorite fish dinner, such as baked salmon, halibut or ahi tuna. Eat inside of toasted pitas. Serve with cucumber sandwiches or chicken salad sandwiches, along with sweet iced tea. Serve for your Summer barbecue with other Summer favs like BBQ chicken and corn on the cob.
Storing Leftovers
Have leftover salad? Store in an airtight container in the refrigerator for up to 3 days. TIP: This also makes an amazing gazpacho! Simply blend the leftover salad, and then chill. Pin for later:
