Fresh Kale and Lettuce Salad

This kale salad is 100% picked from our garden which always makes me very happy. It’s made with chopped kale, lettuce and slices of radishes. I prefer oil based dressings instead of creamy, so I made a simple lime dressing to go on top. To balance out the sour taste of the lime, we add in a little bit of sugar. This is one of my favorite Summer salads to eat for lunch, or as a side salad for dinner. To bulk up for lunch, sometimes I add in cherry tomatoes, avocado chunks or chopped nuts on top for a good crunch! Looking for more kale salad recipes (they’re my fav too!). Also try my Rainbow Kale Salad which has a lemon dressing!
