How to Make Stuffed Mummy Peppers
First, remove the stem off each pepper and then cut in half. Place the peppers on a baking sheet. Fill each pepper with black beans. Add 2-4 strips of cheese per pepper, depending on their size. I think ripping up a mozzarella cheese ball works best because the cheese is thicker, but you can also use already bagged shredded cheese if you want. Throw them in the oven for 5 minutes so the cheese completely melts. Now grab some candy eyeballs because the Mummy needs eyes! Press two eyes into each pepper on the melted cheese. I would recommend you do this immediately when they come out of the oven, so the cheese is still soft, it will keep the eyes in place better. And just like that you have the cutest little Halloween peppers ever! Enjoy!
Can I make these in advance?
You can make these in advance by a few hours, but I don’t recommend letting them sit overnight. If you are making in advance, don’t put the eyeballs on them until you are close to serving. Sometimes the moisture in the refrigerator will cause the eyeballs to bleed, which although is spooky – isn’t as cute! Pin for later:
