It seems that whenever I make mashed potatoes, I always make way too much. No matter how much I’ve tried to calculate and estimate, at the end of the dinner, there’s always a leftover container filled with mashed potatoes. We could just eat them with tomorrow’s dinner, but day-old mashed potatoes aren’t quite as good as fresh.

What to Do With Leftover Mashed Potatoes:

There are a couple ways to get around this. You could freeze the mashed potatoes to enjoy with another meal. If you’ve got enough leftover potatoes, you could simply add the potatoes to a saucepan and add in milk and stir up a batch of potato soup. Or you could make everyone super duper happy and make some of these easy leftover mashed potato patties Every bite of these pillowy soft mashed potato patties is heavenly! Flavorful, fluffy and loaded with deliciousness, these simple potato patties with crisp crust are a crowd-pleaser! Mashed potatoes (prepared as you usually make mashed potatoes) Milk Breadcrumbs Yellow onion Green onion Egg Dried parsley Salt & pepper Garlic powder

How To Make Mashed Potato Patties

This recipe could not be easier! It starts with leftover mashed potatoes and, of course, you can always make mashed potatoes just for the patties.  You can even use instant  mashed potatoes, I won’t tell anyone.

Start by combining all of the ingredients. Stir them all together in a bowl, so they are completely combined. With your hands, shape into small patties. On average you should make about 14-16 patties from this recipe. Coat a skillet lightly with olive oil and heat on medium-high heat. Add potato patties to the skillet and cook them for about 4-5 minutes on each side, or until browned. Serve as is, with ketchup, or any favorite sauce and/or topping.

Flavor Variations:

This leftover mashed potato recipe is very versatile. You can really get creative with the seasonings and mixins in this easy recipe! Pretty much anything in your fridge is up for grabs. Take the base recipe and run wherever the leftovers in your fridge take you! Ha! Got a bunch of shredded cheese? Great, add it in. Want to work some veggies into your toddler’s diet? Excellent, stir in some cooked carrots or even cabbage. Feel free to add different spices & herbs, a little bit of meat/protein and whatever veggies you have on hand! The options are endless! A few of our favorite combos include:

ham, cheddar, bacon taco meat, taco seasoning, corn, cheese Italian sausage (or pepperoni), oregano, mozzarella leftover chicken/turkey, poultry seasoning, topped with leftover cranberry sauce sun dried tomatoes, basil, mozzarella, topped with pesto

How To Serve Mashed Potato Patties:

These are delicious served alone or with a variety of different toppings and/or sauces. Some of our personal favorites are listed below.

Sour cream and crumbled bacon Applesauce Ketchup Hot sauce or salsa Top with sautéed veggies Or with bacon (or sausage), eggs and melty cheese

Can You Freeze Mashed Potato Patties?

These yummy potato pancakes freeze so well. They are perfect for meal prepping and making ahead of time. Make them just as you would if you were enjoying them immediately. Then, start by partially freezing them in a single layer on a plate or baking sheet. This way they won’t get mushy and stick together. Once they are partially frozen, you can store them in a freezer-safe container or bag and freeze them all together. When you’re ready to enjoy, thaw them on the counter or overnight in the fridge. To heat, just pop them in the microwave or warm them up in a hot skillet. I do this all of the time and serve them in my daughter’s lunch box. She loves them with ketchup and they’re so easy for her to eat.
