These Blueberry Cornbread Muffins are delicious! They’re moist, full of flavor and I’ve been dreaming about them ever since I finished the last one. Yes, seriously, these muffins are made with no electricity! No gas or electric oven! These are made in a solar stove, meaning they are being cooked with the help of that bright beautiful sun in the sky.  Solar cooking is pretty amazing and life changing.

Since it’s Summer time and you’ll be spending lots of time outside at picnics, camping, gardening etc I thought it would be a perfect time to introduce you to solar cooking.  As I mentioned above it’s life changing and I’m obsessed with it.  The first time you cook with just the sun it’s a stunner of a moment.   You’ll feel so proud and happy for doing the world good. You’ll also tell all your friends and family that the food you are serving them is solar cooked because it’s that cool.  Everyone will be amazed.

Solar Stove Recipe

My solar stove of choice is the GoSun because it works great, is super light (ol “weak arms Pamela” can easily carry it) and looks pretty slick.  With us spending weekends up on the land with no electricity we rely on campfires and this solar stove to keep us fed.  I started using the GoSun a few weeks ago where I easily threw all the ingredients for a cheesy pepper egg omelette into the stove, came back 20 minutes later and breakfast was served.  I love this because time is valuable in the garden so I can just walk away from the solar stove and let it cook while I’m playing in the dirt.

The GoSun Sport is great because it does everything: bakes, boils, fries and steams which means it can cook or bake anything.  It heats up to 550° F! It’s fuel-free (doesn’t need charcoal, has no flame) so there’s no mess.  Direct Sunlight is best, but not to worry, it cooks in the Winter and on cloudy days too.

So far this year I’ve made omelettes, oatmeal, cornbread, muffins, potatoes and a vegetarian chili with my GoSun.  Next up I’m going to try baking bread and some pasta dishes.  I think it’s pretty cool that you can be out in the middle of no where with no electricity and make a entire lasagna dinner.   But let’s talk about muffins, because these Blueberry Cornbread Muffins are DELICIOUS! Also, to note in this process. I am doing this completely off the grid, in nature, with no kitchen, no appliances, no running water.  The background of these photos is the floor of the shipping container so this is extremely simple, natural baking happening here. First up, mix your dry cornbread ingredients, it’s a combination of cornmeal, flour, sugar, baking powder and salt.  Then add in your water and continue mix.  We’re not using milk, or eggs, or oil because I wanted to make this easy for outdoors baking. Now add in your blueberries.  Bonus points if you can pick them from your garden and throw them right in. Fill up your baking cups with the batter, about 90% full. I put my GoSun Stove out in a open area on a bright day.  Add your filled baking cups to the tray. Now, go back to work.  Do whatever you were doing. Maybe it’s gardening. Maybe it’s relaxing.  Whatever.  Just enjoy the outdoors.  Most things take at least 20 minutes to cook, so after 20 minutes I will check on them and then come back. And in 30 minutes I had delicious smelling (and tasting) Blueberry Cornbread Muffins. Check out the before and after. You guys. This is wild. Muffins made without electricity!

The blueberries added themselves nicely to the batter. Each soft bite had a taste of blueberry. And because I used the silicone baking cups, they pop out of the cups without a crack (seriously, they all perfect).
