Cucumber Bread Recipe
I saw a few baby cucumbers growing on the vine last weekend but somehow those babies transformed to multiple large cucumbers in just a few days, ready to be picked and enjoyed. My Half Sour Pickle recipe is a favorite way to use cucumbers, but I wanted to explore how to bake with cucumbers! You’re going to love this Cucumber Dessert recipe. Cucumber Bread is similar to Zucchini Bread, but instead is made with grated cucumbers. After the bread cools, a delicious powdered sugar glaze is poured on top to make it really special. Some people have commented they’ve made the bread without the sugar icing and still loved it, so it’s optional (although I highly prefer you try it!) This recipe is perfect for Mom and Dad, but also perfect for toddlers and kids! Even my 2 year old loves a piece of this for breakfast in the morning! Want to bake with more veggies? How to Make Cucumber Bread
This recipe calls for 1 cup grated cucumber. If you have never grated a cucumber I’m going to walk you through it quickly. You’ll probably 2-3 small cucumbers or 1-2 large cucumbers to equal 1 cup.
Next peel the cucumber. Have you ever seen a cucumber nude before?! Well now you have. I just use my potato peeler for this.
Now remove the seeds with a spoon. Make sure to get all those seedy watery guts out too.
Grate the cucumber until you get 1 cup worth. I use my cheese grater for this. Cucumbers are watery so this gets a little messy.
Now, this is a important step that you can’t skip. Cucumbers are really watery, 96% water to be exact. After you grate your cucumbers, place in a mesh strainer and drain. Use your hand to press down on the grated cucumber to make sure to remove all the excess water. I like to additionally let the cucumber sit in the strainer for 15 minutes, and then give it one more press with my hand after that.
If you don’t drain, your bread is going to be soggy and fall apart. You don’t want that.
Continue following the recipe, mixing all the ingredients together. Spray a 9×5 loaf pan with nonstick spray and then pour the batter in. Bake for 60 minutes.
And out comes this delicious Cucumber Bread!
Let cool in the baking dish for 15 minutes and then carefully transfer to a wire rack or plate. Once cooled, drizzle the sugar glaze on top.
And just like that you have delicious Sugar Glazed Cucumber Bread!
Once you cut a slice of it you can see small specks of the green cucumber, it’s absolutely gorgeous!
Can I freeze this Cucumber Bread?
Absolutely! I often make a couple batches when we have too many cucumbers! I bake the recipe as is (without the sugar glaze), and then once cooled I transfer to freezer bags.
Once we’re ready to eat it, I’ll defrost overnight in the refrigerator and pop it in the microwave or oven to heat it up. After it’s heated, I’ll make the sugar glaze and pour it on. And just like that I have fresh Cucumber Bread whenever I want, including in the Winter!
